Every year my neighborhood hosts a Wintertide festival that brings in tons of tourists, and every major corporation wants to participate in the vent; It is a wonderful money maker and wonderful for getting your name out there, the stores that sell clothing, jewelry, hats and shoes have it easy. They just get a folding table and rent a space. They flop their merchandise on the table and take payment via square, then well a steakhouse owner appreciate myself is a bit stuck. I specialize in smoothies and paninis. I need to have electricity, water and plenty of room for food prep. I need at least a grill top, chopping area and a sink. I looked into buying a food truck just for the event but it was too costly, but for years I just could not participate in the event. I then talked to another steakhouse owner that does it every year. I found out what all the food businesss are using. They contact a progalbe facility business and get a shipping bag for the week. They can design a modular kitchen all online and have it shipped ready to use at the event. When they are done, the business picks it back up. It is that easy, then yes a portion of the profits goes to paying for the facility, but it is more than worth it. I have already designed my space and I am ready for the Wintertide festival. I am going to participate this year! I will have plenty of space to do all my meal prep and have a worker in there with myself and others too.
