Why does the HVAC in my favorite eatery so inadequate

There is nothing worse than having a wonderful meal ruined by poorly functioning HVAC.

This has happened to me more times than I care to remember.

My wife and I used to have a weekly date night where we got all dressed up to go to a fancy dinner. That was great fun for both of us as we are each foodies at heart. Both our backgrounds are in the hospitality industry which left a deep food & beverage imprint on each of us. However, that imprint comes with an elevated expectation level when dining. Being comfortable in the dining room is an elemental part of those expectations. And, they should be for any diner paying rather expensive prices for a dining experience. The food can be superb, the service totally on point but, if the dining area is uncomfortable, it just ruins it. I have been to really top shelf restaurants where I have experienced the full spectrum of HVAC discomfort. One of my favorite places would serve our food and we had to attack it. The dining room was so cold during the winter that our entrees would simply be stone cold if we didn’t wolf them down. That is completely unacceptable. The reverse is no better. There is a local favorite of ours that isn’t all that fancy but has tremendous food. We finally just started ordering take out from there because the HVAC cooling is non-existent. Who wants to sweat their way through a meal? I know I don’t. It just boggles my mind how these places won’t just fix the HVAC problem instead of risking losing patrons.
